This exceptional decaf comes from the Mustafa family estates in Acevedo, Huila—one of Colombia's most celebrated coffee-growing regions. The Mustafa family has cultivated coffee in these fertile volcanic soils for generations, growing Caturra and Castillo varieties at elevations of 1,650-1,800 metres. Their commitment to quality extends through every stage of production, from selective hand-picking to meticulous washed processing.

After traditional washed processing at origin, the green coffee undergoes decaffeination using the EA (ethyl acetate) sugarcane process—a natural decaffeination method that uses ethyl acetate derived from sugarcane. This process is gentler than traditional chemical decaffeination methods, preserving more of the coffee's original flavour characteristics and sweetness. The coffee is steamed to open the beans' pores, then soaked in a solution of naturally derived ethyl acetate which bonds to caffeine molecules. After caffeine removal, the coffee is steamed again to remove any remaining solvent, then dried to optimal moisture levels. The result is a decaffeinated coffee that retains the complexity, sweetness and character of the original beans—proving that decaf can be delicious.
