Exclusive Harvest & Unique Washing Method Our harvest spans from December to March, a time when our seasoned experts handpick each coffee cherry at its ripest, seeking that deep wine-red hue that signifies utmost quality. At COMSA, we cherish our washing method: the coffee cherries rest overnight post-harvest, fermenting in their own essence before being depulped. This thorough process continues with further waterless fermentation, followed by sun-drying for 6 to 8 days, weather permitting.
Consistent Quality & Environmental Commitment With a moisture content of 11.5% - 12%, our beans are ready to be packaged and stored, always upholding the highest standards of quality.
